This peeling knife will make quick work of preparing of fruit and veg.

Global GSF knives are smaller-sized knives. The exclusive to John Lewis fluted blades allow food to fall easily away from them as you cut.

The first Global knives were designed in 1985 by Komin Yamada whose mission was to develop a range of knives that was truly new and revolutionary, using the best materials available and the latest manufacturing techniques. He was to fashion a series of kitchen knives which would appeal to the professional and amateur chef alike, be comfortable and easy to handle and meet their most demanding requirements.

With razor sharp blades, smooth contours, a seamless design and distinctive dots, Global was born. Using traditional samurai sword craftsmanship, each knife is painstakingly handmade to guarantee perfection. The perfectly balanced formula ensures that each Global knife is light weight, ideal for those who love to cook.

Global Knives are made from the finest high carbon stainless steel, utilising a unique Molybdenum/Vanadium alloy. The blades are ice tempered and hardened to Rockwell C56and#176; and#8211; 58and#176;, thus holding a steep, acute cutting edge whilst being robust and stain resistant.

Global knives are the best you can get - there is no question - the price is worth the sheer quality of the workmanship. If you are thinking of buying kitchen equipment for work or home then global just have to be the first choice. I have never come across such amazing knifes that stay so sharp.

I knew this product was excellent as it was one of a set we had but had lost this particular knife. My wife was going demented over it's loss, and potatoes were rotting by the ton as she refused to peel them with any other knife. The end arrive by date came and went and to preserve marital harmony I had to contact the seller. They replied promptly, investigated and then sent out a replacement. I am not inclined to blame the sender for the delay I suspect our knife became a Royal Mail casualty, but happily all is now well, my wife is happy, and I may overdose on potatoes as she overcomes her withdrawal pangs by peeling to excess.
To those who have never owned a Global knife then nearly £40 may seem OTT to peel the spuds. Once you have owned Global knives however you are unlikely to ever want to use a cheap knife again. Our set of 6 varying Global knives is now complete again. The knife block no longer has an aching space where a knife used to be. The little one has returned and all is well with the world.

I bought this knife, together with others of the same make, as a gift for my son who is just setting up home and fancies himself as a bit of a whiz in the kitchen. He was delighted with them and when I tried them for myself I could understand why. I simply could not believe how sharp they are. I found that I could cut perfect, wafer thin slices even from an over ripe tomato. They are scary sharp and need to be treated with the utmost respect. I cannot believe you will find a better quality knife at any price: they are worth every penny I paid for them.

Bought a set of 6 last year and wanted a small peeling knife to complete the set. Worth every penny, every Global knife is RAZOR sharp and stays that way. A great little knife.

I bought this knife to add to my 5 knife set. It's great, and sees much more use than the GS-38 paring knife now. As the description indicates, it's perfect for peeling, and keeps it's edge far longer than any other non 'Global' knives i've owned.

I owned one Gobal knife before and loved using it - sadly it disappeared - thrown out with the peelings, borrowed not returned - I will never know. So I purchased this little knife. My only wish is that the handle be a tad plumper as it swivels in my hands - it seems flat rather than rounded like my previous one.

I wish I could afford the whole set, but having said that, this little beauty does a mammoth job along with one Global big brother. Sharpening - what's that, this knife stays sharp seemingly forever.

.. but they are quite fragile.
Global knives are extremely sharp providing that you regularly hone them. They are however extremely fragile and need to be treated like glass. If you drop one on a tiled floor then there's a good chance it will break.
Given the high price I think they may be impractical for day to day use.
