The Imperia pasta machine is an original device to make your hom-made pasta. The machine consists of 2 rollers that can be gradually adjusted: therefore you can stretch the dough in thinner sheets by turning the crank. Once achieved the desired thickness, put the dough in the cutting pastry accessorize for spaghetti or tagliatelle and it's done.
The set inlcudes the machine, the clamp, the crank and the detailed instructions for use. Extra accessorizes are alos available to make different types of pasta. We suggest to clean the machine with a cloth before storing it. do not dip in water. 150 mm rollers. Cutters T.2 (2 mm) T.4 (6.5 mm)

PS - if you think you don't need one of those pasta drying racks - think again! You do.
1. You will need a flat service with enough of an edge that juts out so you can attach the clamp underneath. If you don't, then using this machine will be difficult.
2. It's a nightmare to clean. Any moisture inside and it will rust to bits so needs constant shaking out and chipping away with an old toothbrush to get rid of the dried-on dough that accumulates on the shapers.
The machine is easy to set up and put away. The rollers really require very little maintenance, and it's very easy to use.
I found one of the accessories a bit flimsy (the metal tray that hooks on to it), but otherwise it's a very sturdy piece of kit.
I'm not totally satisfied with the mechanism by which it hooks on to the work bench. I find that I can't ever get it to be completely motionless, particularly when you start with the thicker bit of pasta.
I love this machine. It really is so easy to make great spaghetti, fettuccine, lasagne sheets, and anything else. I've never owned one before, so I can't compare it to anything, but based on the fact that I had never made fresh pasta before, I would say that this is an absolute must if you want to try your hand. It might come across a little bit pricey, given some of the alternatives, but it really pays to have a sturdy machine.
The first batch of pasta, made as a practice run did not seem to have become dirty inside the machine so we ate it, no point in throwing away good food. I made a lasagne which went down well and used the last small sheet of pasta in the cutter on the fine setting. This went into soup the next day and it worked well with a lovely spaghetti like texture and delicious flavour.
I have the spaghetti attachment on my wish list, but having used the fine cutter that comes with the machine, I don't think I need to get it and there are lots of shapes you can make just by using pieces of rolled out pasta, perhaps cut with a fluted cutter. If I had one grumble it is that you can't take the machine apart to wash it, but having used mine it certainly did not seem to be dirty - just needed brushing with a soft brush and a wipe over with a slightly damp cloth.
