INSTRUCTIONS
MILK SELECTION
We recommend organic dairy milk for the best kefir, but cow and goat's milk work well. Whole milk produces thicker kefir, while semi-skimmed and skimmed milk make thinner kefir.
ACTIVATING THE GRAINS
Use a glass jar for fermenting milk kefir.
To activate, place the grains in 250ml of milk and cover the jar. Leave them at room temperature (21°C) for up to 48 hours until the milk separates.
- Stir the mixture well, strain out the grains, and discard the milk.
THE FERMENTATION PROCESS
Use 250ml of milk per 5g of milk kefir grains. Place the grains in the milk. Stir the mixture every 6 to 12 hours.
- Fermentation time varies with room temperature. Typically, it takes 24 hours at 18 degrees Celsius. Adjust time as needed.
THICKENING AND TEXTURE
Grains may take time to settle into a new environment. Milk kefir may not thicken fully in the beginning, but it's still fine to consume.
After settling, kefir will have a better consistency and taste.

Once you get used to it, you may like it stronger, but you can make it milder or stronger, depending on how long you let it grow.
Tips:
1) When you first start, use only a small amount of VERY fresh whole milk (about half a pint tops) and gradually increase once it gets going.
2) Get a couple of fermenting jars as shown. Keep them clean.
3) Once fermented, drain through a plastic sieve, then put about half of the solids back into the (cleaned) jar for the next batch. Throw the rest of the solids back in the liquids and blend with a hand-held blender, before putting in the fridge. This produces a nice thick liquid.
You will never want to go back to the bland supermarket kefir. We add it to our breakfast, it goes well with granola and fruits.

Place the Kefir grains in the jar, add about 30ml of whole milk, and leave in a warm place or if it is cold, place a towel to trap in the warmth. It can take one to three days to be ready. Sieve out the grains from the kefir, place the grains back into a clean jar, and add 60ml of milk. Repeat as above twice more, doubling the amount of milk. the Kefir grains are now ready to make a full jar. Never wash the grains. Best Kefir grains on Amazon and I have tried a few different ones.

I have been a user of kefir for many years, however I travel and therefore find that the restrictions on customs mean that one can’t take this product through customs, with any sense of responsibility. However I also find that storing or retaining grains is subjective as to their viability. I therefore raise the Question of cost. The price of grains is now almost that of Gold!! admittedly these are two different commodities and could potentially last for the same period.
However if your genuine intentions are for the benefit of mankind and not just to exploit a market that promotes good health etc, then I believe that your prices should be reduced, as the continuing promotion of a product that has never been disproved as bogus or not doing what it says on the tin, leads me to believe that an acceptable reduction in price, would be beneficial to more people and as well as promoting your product, would also increase sales to the benefit of all.

After reading carefully the instructions I tried to follow them precisely and in 7 days I noticed that the kefir they produced began having a decent taste and I started consuming it. Today (day 12, last picture) I can say the taste has improved even more, although I do think there is more room for it. I think it has about doubled in size as well.
