But, I followed the instructions to the letter and can honestly say I am converted! That’s after one meal!
I am transitioning from vegetarian to vegan and, of course, my weak spots are eggs and cheese. I haven’t drunk cows milk for around 16 years now.
So, the challenge for my transition was to make it as easy as possible. Whilst I am trying to eat plant-based foods as much as possible, I still want some quick go-to comfort foods for when I get in from work absolutely starving!! I’m only human after all!

I followed the instructions but used soya milk rather than water. I put a jug of milk in the freezer about half an hour before making up the ‘eggs’. I think though, that I could keep a jug of milk at the back of the fridge and that would work. You can use a whisk, but, the instructions recommended a blender for ‘fluffier’ eggs. I used the blender - for about a minute on the first speed. I heated my oil whilst blending the mix and poured it straight into the pan. I seasoned it with black pepper and turmeric. The mixture started forming an omelette type consistency almost immediately. However, as the cooking process went on (about 6-7 mins), they started to scramble. That was fine though 🙂. I served them with grilled potato waffles and some baked beans.
They were delicious! You could use vegan grated cheese for more of an omelette. The options are endless to be honest - except for one - I will not be returning to chicken eggs (or any other animal egg)!

I’m not sure if I’ll order it again as I don’t do that much baking and it’s still only “a bit” like scrambled eggs, but I liked it and suspect I’ll finish the packet!
The consistency is good, the colour is a little too yellow, and the taste is a nearly there but not quite.
