About the Author
C.J. Jackson spent many holidays as a child in Scotland, catching and preparing fish. In the 1980s and 1990s, she worked in Australia, the Far East, the Middle East, North Africa, Switzerland, Spain, Italy, and France where she was exposed to seafood cookery in many of the world's great culinary traditions. In 1989, she enrolled as a student at the prestigious Leith's School of Food and Wine in London and went on to teach there, a post that gave her further opportunities to research into and write about seafood. Today, C.J. is Director of the Billingsgate Seafood Training School, a charity situated above London's Billingsgate Market, the UK's largest inland fish market. Here she runs courses, teaching people how to select, prepare, and cook sustainable seafood. Working in this historical market, with its many wonderful personalities, the degree of expertise, and, of course, the range of fish, C.J.'s fish fascination is indulged every day. C.J. is the author of The Billingsgate Market Cookbook, the co-author of Leith's Fish Bible and The Cook's Book of Ingredients, and a regular contributor to the BBC's Good Food Magazine.

Bought this for my Mum's birthday, and it was so good that I ordered a copy for me as well! Gives hundreds of recipe ideas, as well as the basics of how to prepare the fish. Not full of weird ingredients that you've never heard of! I've only just become a fish eater, and this book has totally inspired me to try new ideas, with plenty of variations. Should keep me going for years!

In general we (myself included) do not eat enough fish. Personally I do not like prepping them, and am slightly phobic about getting a bone stuck in my throat. This book should provide fish inspiration for everyone. It covers all aspect of fish cookery, how to choose, store and cook with over 300 recipes. As you would expect from DK presentation is key and tip top in quality. The book is laid out and for me the selling point is the techniques section with advice on how to prepare and fillet all types of fish and sea food. For those that do not know their cod from their coley or hake from herring there is a fantastic fish gallery. Scattered throughout the book is loads of information on sustainability so you can enjoy your fish with a clear conscience. Perfect for anyone who likes fish and wants to learn to cook it to the more experienced cook this weight book covers everything.

An idiot's guide - great! The extra info about different types of fish and their habitats and use was an added bonus.

I love this book, the pictures the info the advice if you like cooking your own sea food get this book, I catch my own sea fish and love to experiment
