Like most of the microsoft press, the book has a thorough coverage of all the menus including all the ones you are unlikely to ever use. It glosses over the planning of an installation and the who planning bit only amounts to 10 pages. The whole subject of domains is covers in three pages including diagrams.
This is a very good reference book, but you are likely to need something else if you have not worked with mail systems before.
What is missing is examples of actual configurations that you might meet in the real world. This book will not help if you want to setup a multi-site multi-server mail system.
