Not a cook book as such, and in fact it can be a little daunting to find what you need quickly - but that misses the point of this staggeringly important body of work. What it is is a record of thousands of classic techniques, recipes, sauces, you name it from possibly the greatest chefs to have lived.
You will find a copy of this on the library shelf of any top chef for the simple reason is - this is THE book.
Even if you dont cook, just flicking through it is a total delight.
If you like your cookery books with big glossy pictures and photographs of Ainsely or Jamie glaring out at you, this is certainly not for you - but as I say - that really isn't the point
