5.0 out of 5 stars A Culinary Giant 28 Nov. 2015
By David Matthews - Published on Amazon.com
Format: Hardcover
I found a reprint of this book years back in Cagne-sur-Mer and it became a favorite source of culinary inspiration during my years cooking in France.

Nignon was a Chef's Chef, much in the same tradition as Careme. A Grand Seigneur, he was a self made man, and it takes a sophisticated gastrosoph to appreciate both the complexity and zen of this man's art and writing.
