Tom Hunt is an award-winning eco-chef, writer and climate change campaigner. His Bristol restaurant Poco has won numerous awards including Best Ethical Restaurant at the OFM Awards. He has written for many newspapers and magazine and writes a weekly column for Feast magazine in the Saturday Guardian offering ingenious no-waste recipes. He is an experienced speaker and cook at events, including Taste of London, Borough Market, Feastival and Abergavenny Food Festival. He is a campaigner and ambassador for Action Against Hunger, Soil Association, Slow Food International and The Fairtrade Foundation. This has to be in the top 5 food books I've bought in the last 20 years.
It's better than nearly all the academic texts I've read on explaining our food system and how do our bit for the planet, combined with a cook book with a difference.
The difference, the recipes are detailed enough for a novice, exciting enough for a gastonome, and are uniquely designed to teach you how to cook great food.
Congratulations Tom Hunt, a masterpiece.

This book has blown my mind a little - in a really good, but thought provoking way!
Honestly I kind of wish Tom would write another book with information about food waste, sustainability, correlation to health etc, a bit like all of the information this book begins with, but in more depth for people like me who want to geek out on it. I find Tom's style of writing really easy to follow, but still so full of important information.
I committed to reading the book cover to cover, and the first section of the book details some super important information about the food/farming/sustainability sector and why it is and should be important to us. There are also guides to help you understand how to make useful changes to the way you buy, eat, and use food - which is so great as you get all of this information and kind of this, God where do I even start?! Well Tom outlines that for you in simple steps.
Anyway I thought the layout of this book was so clever, as you understand WHY you care, before understanding HOW you can care. The recipes then all tie in with this information so you are even more interested in trying them than you would be if you just flicked straight to specific recipes.
Anyway - AMAZING information and a super important message, finishing with absolutely delicious sounding recipes.
Some of the ingredients may seem a little daunting at first, like the various types of beans and flour etc, if you're not a very experienced cook like myself. However, if you go to the back of the book you can find where it is possible to source these ingredients, and there are also options to use different ingredients depending on what you have - so don't be put off, just spend the time digesting all of the information before you go to digesting the food!!

Really enjoyed this book - particularly resonant now that frugality is so urgently needed. Helpful discussion of the author’s ‘Root to Fruit’ philosophy and the Slow Food movement with useful ways to use alternative grains and vegetable trimmings. First up to try will be the ‘swede pretending to be a ham’ and aquafaba brioche.

What a fabulous book. Tom is clearly hugely knowledgeable and passionate about food and the impact of eating on the planet. This book would make a great gift for anyone interested in sustainability. More than a recipe book, Tom explores the philosophy behind our broader relationship with nourishment in a finite world - a world which still offers us so much in abundance. A real celebration of seasonal choices, inspiring ingredients and thoughtful consumption.

Ok but not as good as I hoped it would be. Most of the information is if the kind that people who care about food and food production would know already. Recipes ditto. Also the 'vegan brioche' dough is downright nasty.
