What I love about this jerk seasoning is that it really does pack a punch. There's quite a bit of chilli in here and you don't need to use a vast amount (although I do tend to use quite a lot because I like spicy foods). It's also fairly salty so just keep that in mind when deciding how much you want to use.
In the past, I've coated chicken thighs in a generous amount of the jerk seasoning, marinaded for a good 6hrs, and smoked them in my kettle barbecue. The flavour from the wood I used really worked well with the flavours from the seasoning. Alternatively, though, just marinade for a few hours and cook in the oven.
It is hot but not too hot. I'd normally put 10 Scotch Bonnets in a marinade for 1Kg of meat - this tastes like it uses 5 or 6. I BBQ my chicken using the indirect method, over alder and beech smoker chips.
