This book may be helpful to some home bakers but I found that it did not live up to its title.
Although the author has impressive qualifications and experience with sourdough cultures he is very casual about some procedures which demand care. Also some of his suggestions are ill-advised - exposing a developing culture to the open air is an invitation to all the bugs, good and bad, passing your door. Alright, sometimes it works but often you will finish up with a stinking brew which would put you off sourdough for good.
For anyone but an American the use of cups and spoons for measurement is irritating - I spend more time converting to grams than baking. Most American books on bread recommend the metric system for its precision.
In spite of the impressive collection of bread formulae I don't find this book helpful and regret that I bought it.

This is an interesting but not easy to read book. I found myself looking backwards and forwards through the book to piece information together. I gave up in the end with regard to following any of the recipes. Really not a good book for Europeans as the recipes are given in cup measurements and suggest gallons of starter quantities.

If you are serious about baking your own bread this is a book to have. Everything from the history of Sourdough starters to recipes for Bread Machine, including very passionate words about how the author become interested in sourdough. It has a make a big difference for me and It will certainly do it for you too!

I simply wanted to inform those of us who find the 'cup' system unusable and therefore did not buy this book that the newer edition (Classic Sourdoughs, Revised) does at last have metric equivalents.

This book finally gave me the insight in sourdough that I needed. It gave me also the insight in the various grains on the market and the various types of wheat and stuff like that. Many nice details. Very informative and got me totally into sourdough again, which we love anyway, now its just easier to make.
