Product Description

This professional electric Knife Sharpener is recommended for sharpening all kinds of European and Western Knife blades, including straight or serrated edge household knives and pocket/sporting knives. It is also recommended for re-conditioning heavily worked knives. Once you own a Chef's Choice knife sharpener you no longer need to use a professional sharpening service to keep your knives in good condition.

Incorporating 100% diamond abrasives Chef's Choice Electric Sharpeners create long-lasting razor-sharp edges. Chef's Choice sharpeners are precision machines, designed to deliver unsurpassed sharpening satisfaction, and manufactured to last a long, long time.

The Edge Select Model 120 uses conical 100% diamond coated disks in Stages 1 and 2 and a revolutionary stropping/polishing disk in Stage 3.In just seconds, an edge of unprecedented sharpness and durability is obtained. The flawless, highly polished fine edge can be customized to suit the cutting task. High precision elastomeric angle guides eliminate all guesswork.

Tested and trusted for over 25 years, the Chef'sChoice brand is recognized as the industry leader in the manufacturing, marketing and distribution of knife sharpening products. Known for the highest quality and innovative products, ChefsChoice manufactures their knife sharpeners in a fully integrated manufacturing facility in Avondale, Pennsylvania, USA, incorporating technology that uses 100% diamond abrasives and precision angle guides to achieve better than factory edges that stay sharp longer, with minimal edge removal and no detempering.

These are the best knife sharpeners in the world, and there is a knife sharpener to suit every application. Please note that Edge Select Model 120 is not suitable for Asian knives, so if you are looking for a sharpener that will sharpen Asian knives we recommend Chef's Choice 316 Asian Electric Knife Sharpener (reference 13831600), or Chef's Choice 1520 Diamond Hone Angle Select (reference 13815200) which sharpens both European and Asian knife blades.

I bought this over the 110 model as it has Trizor plus sharpening and it sounded good. Yes I am that shallow! :)

The reviews for the 110 are good but to be honest I have never been any good with either a whetstone or sharpening steel. My global knives are now blunt which is a shame so I thought I would try this. So I was dubious this would work too.

After reading the instructions and turning it on I gave it a bash with all my knives. The instructions say not to cut the plastic by pushing down too hard but being a 16 stone 6 foot 2 bloke I still managed to do this. After thinking about Tinkerbell doing it I was ok, you have to put more pressure to the inside than down. The instruction manual says only one or two strokes are necessary but my knives are so blunt it took me multiple strokes. 1 and 2 give a nice sharp edge which feels sharp due to the burr it makes, 3 smoothes off the burr but can make it feel less sharp because of this, but I think that is psychological.

Interestingly my cheapest knife is really razor sharp the expensive Global ones are not quite even though they were incredible when new. I think this shows lack of expertise by the operator rather than the machine as the global are probably made of a lot tougher steel so needs more technique and patience. I'll just keep practicing on them trying different amounts of 1,2 and 3.

Big question of course is whether this is worth that much more than the 110, rather hard to tell without trying them back to back to be honest. The 120 and 130 both use springs to hold the knife in place, the 110 uses magnets. The 120 has a final stropping stage to get rid of the burr the 110 does not. The 120 has a bit more wattage as well and apparently takes half the time to resharpen. It also does serated knives.

Well as a keen cook I love sharp knives but was fed up asking my butcher to put the edge back on them. A 'steel' would keep them sharp for some time but eventually they still needed to be sharpened again. I have to admit they had become very blunt and I could have sat on them without too much concern, so I expected the sharpener to have its work cut out. It says only to use the left hand option for really blunt knives which mine were so I used this for 6 times either side, then went to the middle option and did 6 times on either side and finally the right hand side and put it through 3 times either side. I was very pleasantly surprised at how sharp they had become. Where they as good as new, no, but they were very sharp and I probably think it was the operator not the machine at fault! Practise make perfect as they say. Not cheap but it is a pleasure to have my 'new' knives back. Lastly the machine does make some noise and after the first time I wondered if there would be any metal left but I could see no difference so its bark must be worse than its bite!!

I have lost count of the number of knife sharpeners I've owned. I have whetstones, steels, cheap handhelds, a ceramic two-stage wheel unit, and 2 electric sharpeners.
This is the best of the bunch. It is virtually idiot-proof, and very easy to use. It sharpens fairly rapidly, with little effort - perfect if you are sharpening a whole drawer-full of knives.
The edge it gives is a convex 2 step "V" - sharp and long-lasting. I use it with all my knives, from cheapo blades to my Tojiro Senkou and Zwilling & Henckels.
Drawbacks? It's expensive. It's bulky and heavy, and every time you want to use it you have to plug it in (I leave mine on the counter-top permanently). And the knives do cut into the plastic of the unit, as other reviewers have commented - this seems to be an unavoidable (but very minor) design flaw.
If you're not short of cash, or you have a large number of high quality knives, or you use your knives a lot, this is the sharpener for you.

I have must have spent hundreds of hours and hundreds of pounds on whetstones, steels, manual sharpeners and only managed to make my knives progressively more blunt. This has all changed since I bought this knife sharpener and I now have a set of super sharp knives which pass the critical tomato test and are probably sharp enough to shave with. As long as you stick to the instructions, it's easy and quick to use with immediate and startling results. Thoroughly recommended despite the lumpy price tag.

Very pleased. Very good, easy to use, don't rush it, let the unit do the work for you. Mind you fingers after as the edged will be how it should be, very sharp! A good steel will pull the edge back after a fair bit of use, the edge stays shap for quite some time. But you need something like this to put an even ground edge on to begin with, highly recommend.

I've been using the sharper for about a year now, but I have found it is very difficult to purchase the discs because I've had no luck finding a supplier ?
I cannot find any fault in the machine at all it puts an edge on a knife better than a sharper I've come across

i have had this model for years and it still works well (apart from I have really cut into the plastic). If your knife doesn't seem to sharpen on this I have found it is the angle of the knife blade too steep. I regrind any of my knife purchases to a shallower angle. I use the chefs choice to sharpen a Falkniven A2 6mm thick, small folding knives, kitchen knives and even a large machete!
