The best ever Caribbean cookbook, full of authentic recipes and traditional classics from around the Caribbean. The book is written for cooks in the Caribbean so some recipes call for ingredients unavailable in most other places - such as dasheen leaves, and cascadoo fish. However, most are useable, easy to follow, and definitely provide an authentic taste. The only weak section is 'tea and coffee occasions' which contains rather uninspired recipes. To make up for this the book contains a section on traditional recipes which would be treasured even by cooks in the Caribean. The only other comparable book is Sylvia Hunt's: "Sylvia Hunt's cooking: proud legacy of our people" which is not readily available.

Whether you're a novice in the kitchen or a gourmet chef, you'll treasure this landmark, comprehensive tome of Caribbean cooking, the product of the cultures whose crossroads are the West Indies. Rita G. Springer taught many people how to cook as head of the Housecraft Centre in Barbados and this book is an able compendium of her encyclopedic knowledge and skills. The most humble and the most fancy Caribbean dishes are all here, with an emphasis on traditional staples and specialties. Nothing in this book is nouvelle cuisine. It's good old West Indian home cooking well-explained. However, don't expect to be enticed by colour photographs - they aren't any pictures. If you're serious about the food you won't be disappointed. The recipes are explicit and detailed, no glossing over. If you've had even the slightest brush with West Indian cuisine this book is the one you need to dive right in.

This cookbook is a great blessing for the newly wed, the bachelor, the chef who wants to expand on his expertise, the novice and for those who entertain regularly. It is also for the international Gourmet, who wants to see how Caribbean food is prepared and taste without being here in the Caribbean. This book is enriched with recipes from Guyana, Trinidad, Barbados, and the rest of our Caribbean nation.

Rita Springer is very expressive in her directions; if you just take your time and follow her guidelines slowly, you will gain confidence in your kitchen; and believe me all of us need this from time to time. We cannot cook every dish perfectly; we are good at some, and others of us are prepared to eat out in a restaurant particularly on weekends. There is absolutely nothing wrong with that but imagine when you are having a dinner at your home and you want to surprise your guests, you can pick the hints from the settings in the restaurant, and Caribbean Cooking will do the rest.

Check carefully the photos in this issue. They are to die for. This book comes highly recommended.

Format: Paperback Verified Purchase
A lot of people rated this as the best caribbean cook book but I found the recipes and methods very vague and not enough detail with amounts. It seems they were filling up the book with certain recipes like 'how to make tea' or eggs. I will never use most of the recipes. The quality of the paper is poor. If theres a better print, I advise you to go for that as the print has a old school type writer look and the paper makes you cringe as you turn it. Lol
