The handle on the top of the unit should be up. If it is down, pull it up. It is important to note that the writing on the front of the AnySharp should be facing away from you when using it. Place on the surface, and move the handle down. The suction PowerGrip will hold the AnySharp firmly in place. Just put your knife into the sharpening jaw, apply a light pressure, and pull the knife slowly towards you.
Be sure to apply only light pressure and gentle strokes as you draw your knife through your AnySharp. You are using the correct pressure if the action is smooth, and you get tiny metal filings coming off the knife. If you get no filings at all, or the motion is jerky or sticky, adjust the pressure to suit. The knife edge always faces away from you, and your hands are never near the cutting edge at any time.

No skill required
The optimum angle to sharpen a good quality steel knife is 20 degrees. AnySharp is pre-set at 20 degrees to give an optimum edge every time. Getting a consistent angle with a sharpening stone is a skilled job, but AnySharp allows anyone to get professional results without any training at all.

I bought this to replace my aging rotary hand sharpener that had seen better days. The steels on the inside were beginning to rust, and the results were not that impressive. As a passionate amateur chef, a decent sharp knife is essential, I realised my aging chefs was past it's best as well and debated buying a new one. I'm glad I didn't, as the AnySharp brought it back to life, despite the multiple nicks and imperfections on the blade.
As others have mentioned, this will take quite a lot of metal off the blade, but the results were impressive. Slicing through onions was a breeze, and I could cut transparent slivers of onion without effort. I tested the sharpness of the blade against a sheet of A4 paper, and while nowhere as lethal as some of the Japanese knives costing a small fortune, it cut through the paper with relative ease.
I'm not sure if this will last 20 years like my other sharpener, or if it will damage the surface of the knife over the long term. Hence the 4 stars. Not having whetstone skills, I don't know how much material a stone would take off in comparison. If you are looking for something that will sharpen a knife blade with ease and bring it back to life, it is well worth the money.
However..... two months on and I'm questioning its sharpening ability. Yes it does still sharpen but I find that I have to press down hard whilst drawing the knife back and sometimes have to angle the knife to get the desired edge. On top of that the suction foot has broken.
I'm wondering whether or not it can be returned for a replacement or refund.
This small and compact knife sharpener has worked wonders on my kitchen knives and I don't think I will use another sharpener again.
Previously, I have used a traditional 'steel' sharpener (stick type), an electrical knife sharpener and even have a honing stone (which feels necessary if you want a really sharp finish with the steel.
This thing fits in a drawer in the corner of my drawer organiser - you simply put it on a work surface, flick the clamp to activate the suction mechanism (which holds amazingly well to the surface) and simply draw the knife back through the two prongs holding it straight. Do it a few times and that's it! Give the knife a clean, wipe any dust of the sharpener and put it back in the drawer.
The sharpness achieved is really good. It's not quite as sharp as using a steel and honing stone but that takes 10/20 mins to get a really good finish... this is seconds.
When I say it's not as good as a steel and honing stone, it is still very sharp - I can hold up a piece of a4 paper by one corner and glide the knife through the middle of it.
I'm not sure what extra benefit you get from the AnySharp Pro (other than it is metal) but either way, I would highly recommend this sharpener - it's probably the best kitchen gadget I own.
