Firstly this mixer is MUCH MUCH less noisy than a kenwood I previously had. I find it to have a very comfortable noise level that you can still talk to other people in the kitchen when it is on and it is not defeaning on the ears, even at the maximum speed.
I have had this for 2 months now and have used it to make dough, biscuits, cakes, egg whites and it is terrific in every aspect. I was really pleased at how well it coped with a 2.2 pound bread dough. The dough came out perfect. With egg whites, the mixer whipped them up quickly and lightly.
When I made a biscuit dough, the paddle blade was perfect for crumbling the butter and flour.
The sockets to keep the mixer firmly attached to the counter or table is super useful and so is the lid over the bowl to prevent splashing.
I am happy I bought the 7 litre bowl. It is very easy to clean and assemble. It is not very heavy, compared to the kenwood. I feel it is a strong machine and I am so pleased I did not spend £400 on a kenwood when this does the job brilliantly. I have never found that the mixer did not mix the ingredients at the bottom of the bowl even when making a small recipe. The only downside is that my waist is now expanding from the goodies I am making!
Brilliant design, beater mixes thoroughly, reaches bottom and sides of bowl. PERFECT for cake making, even does a great job with the buttercream. Actually performs BETTER than my Kenwood Chef.
For this reason, the Kenwood has been relegated to the pantry, and this is now my full time machine. And for less than half of what i paid for the Kenwood.
One small criticism... Andrew James need to design a flexi-beater. These are a godsend.
LCD display and Automatic/timer options are brilliant. I can put the ingredients in, set the timer and go off to do the washing up. The mixer is a bit noisy but no more than I'd expect from a 1000 Watt motor.
Highly recommended..... By a professional cake baker. 5 Star.
I have made bread and cakes and the cakes turn out brilliantly using the free book recipes. The recipes that come with the instruction booklet are not really very good. I use many of my own. The bowl is huge.
When making bread and cakes in the LARGER amounts ONLY, nothing sticks to the side and in fact after dough making the bowl looked spotless.
The machine's timer settings are actually different to the instruction booklet by one minute but it is fine.
The LARGE sponge cake I made was excellent and kept fresh for days.
The machine does shake a bit however the sucker feet are amazingly strong and the machine doesn't budge. The noise is minimal . The attachments are much improved than the original.
Andrew James's staff to date have been excellent in the service to me when I asked them a few questions.
So, if the quality and working of this machine continues, then I can say that you need look no further for what you pay and get. I am looking forward to the extra items I have requested. .Excellent.
Here is the perfect bread recipe.
Here it is.
Ingredients. 500 gm bread flour or half white and half brown etc. 300 ml lukewarm water.1 Pk of instant fast action yeast or two teaspoons, one tbs honey, 50 to 60 ml vegetable oil. Half teaspoon salt. One egg crackd open into a bowl with 2 Tbs water.
THE METHOD IS WHAT MAKES THIS WORK AND IS FABULOUSLY SOFT.
Boil kettle and measure 100ml into jug, top up to 300 ml with water. Add honey (You can use caster sugar if you wish) sprinkle on yeast and stir/whisk in and leave for 5 -10 mins and you see a foam/scummy top.
Pour into mixing bowl and add HALF the flour. Beat for about one minute to mix in and leave with a towel cover until it almost double in size...about 25 minutes.
Add the rest of flour and the salt with half the egg mixture and the oil and knead with hook for about five minutes.
The dough will become smooth. If it seems a bit dry add a little water (About 20 ml) . This only happens with brown flour additions.
Take out of bowl and knead for about four or five turns.**
Oil bowl and place back in and leave to double in size for about 45 minutes.
Take out and press down all around to expel air and shape into bread and place into pan. I use a breadmaking machine pan ( long type) with the paddles removed. I also had an old one which I completely removed the prongs too.
Place dough in pan and cover for about tweny minutes or so or until double.
When nearly ready about ten minutes before....heat oven to 190.
Use the remaining egg wash on the bread and sprinkle anything on top if you wish and bake for 35 to 40 minutes.
When cooked, tap bottom for hollow sound and if you want a soft top cover in a clean tea towel until cool.
** From this stage you can if you are in a hurry place it into the bread pan to leave to rise until doubled and then bake but it will be a little more like `nimble' bread.
I prefer being a bit patient and going back to it.
The bread is really lovely when done.
