I purchased this to use for herbs as well as prepare some Mediterranean recipies like Kufta and Lahm Bi-Ajeen, where you need to use a hachoir/mezzaluna to blend the ingredients, spices and herbs, with the minced meat. I cannot complain about the quality of the blade or the size, BUT, I found that some of the herbs or the ingredients get stuck between the two blades in which case you you may need to swipe in between the blades and it is dangerous to use your finger. In short, I found having double blades might save you a few seconds as you get a double number of cuts, but you spend longer cleaning or having to get the stuff stuck between the two blades. I regret that I did not go for a single blade.
