Surprising results, strange ingredients.,

Each of the uncheeses we have sampled so far have not been cheddar, however the point of the book is to provide edible and healthy substitutions with a cheesy bite. In this the book does exceedingly well, and once i managed to source the nutritional yeast flakes that most lists call for we were uncheesing away at full steam. The gee whizz cheese spread is good if made with chickpeas and not white beans, and tastes like a cheesy tomato based houmous, and the tofu whipped topping #1 with the addition of three quaters of a teaspoon of almond essence tastes like frangipan. The most useful idea though is the instant cheez-it dry sauce mix which tastes almost like a chicken and cheese sauce,(or a baby food cheese sauce) and is great as you can store the pre mixed ingredients dry in the store cupboard and mix a sauce quicker than it takes to cook the pasta to go with it.With a child in the house with a lactose intolerance I wish I had found this book sooner,and had caught the families taste buds earlier. I would reccommend this if you are willing to keep an open mind on the lack of " english cheddar " substitutes and can be a bit adventurous.
