Earlier this year, I was commissioned to make my first ever wedding cake - a challenge but one I was confident with. However the bride said that she had a couple of people who needed a gluten-free alternative. I didn't have any recipes in my collection that were specifically tailored to that and so had to use the power of Google to find something.

Now I have an excellent book dedicated to the topic.

It really is an impressive collection - indeed I will probably convert some of the recipes back to using regular flours and dairy products because they look that tempting. From the many pictures, you would be hard-pressed to distinguish these recipes from their more traditional counterparts.

I am not a fan of coconut - so the recipes that call for those products will have to be altered if I am to eat them - but I think I have enough experience to work round it. It is worth noting that a lot of the recipes call for Soya-based items - which is fine if the person you are creating for can tolerate Soya (not everyone can).

All in all a really useful addition to my collection - and one that will be called up on regularly.

Did you make the gluten-free wedding cake? I have volunteered to make one for my son's wedding and am a bit apprehensive ... I shall buy this book to see if it's possible, but would be good to hear from someone who has actually done the deed!

I made regular cakes for the wedding cake itself and then did gluten free cupcakes for those who wanted them. I just substituted Dove Farm Gluten Free Self-Raising flour and it worked a treat (lighter than my usual ones!)

There are very good GF flours - so I am sure you will be fine! Much easier than it used to be. Just be certain to check that any other ingredients (like baking powders) are GF as well - not all are

I'm going to have to make the whole top tier GF - it's the Bride who is gluten intolerant! Thanks for the tip about baking powder ... I think I may have to buy ingredients online as we don't have many GF ingredients in Spain - although the selection is growing ...

I found that some fondant icings are made from wheat based glucose. And whilst this should have no gluten in it, I didn't take the risk and found one that was made from a different glucose source. Worth checking for. I think I used Dr Oetkers in the end - and that was fine.
