Michel Roux is one of the great innovators of contemporary and classic cuisine, and his Michelin stars are well-earned. The plethora of TV cookery shows have done much to shed light on the techniques and approaches of the great man, and this beautifully illustrated selection of some of his finest recipes is a fine tribute. However, a culinary artist such as Roux does not necessarily lend himself to the cookery beginner. I am happy to report that for someone with fairly basic skills, and the ability to follow a recipe, will find that there are some wonderful and suprprisingly simple methods and techniques to try in here without being overly daunted. It demystifies the cookery process in easily-understood terms, and I look forward to exploring more of the delights within. Well worth your time.
