Many years ago I had the privilege of going to a Vietnamese street food workshop with Tome Kime, As a chef of near twenty years I had worked my way through the ranks of a few kitchens and learnt a lot about many styles of cooking. Toms enthusiasm was very infectious and the food he turned out was superb. His knowledge of the subject covered culture, regional diversity and variants, ingredients with suitable British substitutes and a staggering understanding of taste and style.
I would rate this book on that alone but have read and use it regularly. His other titles are just as good.
If your looking to wow friends and or just create a dazzling dish for a romantic evening in this is a huge step in the right direction.
A must for any serious foody
