A friend was suddenly diagnosed coeliac and very depressed, especially trying various gluten free produce. I thought I would try to find alternatives she could make herself. I knew I could trust Phil Vickery, ordered his Baking book and tried the bread, cider apple cake, pastry and then gave them to her keeping portions for myself to test for keeping quality, etc. My friend is absolutely delighted, the cake is the best fruit cake she has ever tasted, the bread with onions was much better than anything she had tried incuding 'Genius' and she was so inspired she bought the book herself. The cake freezes and keeps well. The bread keeps very well and the pastry seems fine. I think even if you arent gluten intolerant the recipes are excellent, the cider cake made using is pears is just as delicious.
Only one little note, I would have liked more plain bread recipes in the bread section.
