Most amazing dishes!,

This book is beautifully produced and the recipes are all mouthwatering and very interesting. I can't tell you how glad I am I got this book. I'm not a vegetarian but I aim to eat more vegetarian food, and the recipes herein are so delicious I can't wait to try them out. Only drawback is that they do require quite a lot of time and the sink tends to fill up with all of my pots and pans. But the result! I was especially pleased with the combination of mint/sundried tomato pesto paired with feta and fresh apricots. To die for! I served an oyster mushroom wrap with smoked cheese in it and my guests were thrilled, it tasted fabulous though I couldn't find the king mushrooms required. The author gives you a lot of opportunities to make changes according to what you have around, and I find that very appealing.
The recipes are so different and interesting I've never seen anything like it. I'll be sure to buy more of Dennis Cotter's books. It's actually opened a whole new world of flavours to me.
