A pan for all seasons!,
Verified Purchase(What is this?)
This review is from: Andrew James Luxurious Maslin Pan 9 litre / 2 Gallon - High Quality Grade 304 Stainless Steel - Suitable For All Heat Sources Including Induction Hobs (Kitchen & Home)
This was purchased to replace an old aluminium preserving pan which my wife had owned since before we were married - don't ask - almost pre-history!
The problem with such old pans is that the base becomes distorted and will not transmit heat evenly - or at all on a ceramic hob, which is what we now have. Additionally its base was too big to fit on our largest ring on the hob, thus making it impossible to boils ALL the mixture at the same rate: result = overcooked fruit and a jam which often was too dark and tasted caramelised.
This pan fits perfectly, is of really good quality for the money and has already been used for piccalilli, chutneys and even boiling the Christmas pud!
Tip for this:- use a stainless colander to hold the pudding basin and cover the top of the pan with a large sheet of aluminium foil crimped over. My in-house chef cooked a big pudding this way.
Come mid-January there will be much marmalade making; enough for the whole year, I hope.

Torn between buying this Maslin pan and the similarly priced Kitchencraft. This one is marginally ahead because it looks nicer and has 100% 5 star reviews albeit the number of reviewers is less than the latter. Just wondering about the specification. It is described as being .8mm thick metal but is the base any thicker? I also wonder the size of the diameter of the base _ obviously smaller than 30 cm's. Any help you can give would be much appreciated.
