Although the recipes initially look complicated and full of steps, there are really only a couple of steps to each one and Ms Jaffrey does a good job of making those as easy as possible (e.g. base curry sauces whizzed up in the blender, a marinade that sits in the fridge and then bakes into a lovely curry the next day, as well as other simple ideas such as simple curry pastes you can make from a handful of everyday ingredients).
She also intentionally limits her palette to just a few key Indian spices - to save the average British reader having to shell out on loads of flavours - but these still work incredibly well. I rustled up the chicken and spinach curry in about 45 minutes (with the fried cumin potatoes on the side) for an easy Tuesday evening meal at home, and it was one of the best curries I'd ever tasted. We resolved to make it home-cooked curry a weekly tradition, if not more often.
