Good place to start and more,

Although a little old now, this book is a very good place to start learning about brine curing, dry curing and smoking your own food. We have accumulated a few different books on this subject, but when it comes to the basic ideas this is the one we refer back to time and time again.Once you know the basic techniques and recipes they can be built on, and I would recommend this book as just that, a good basic starter for anyone on a journey into smoking their own food.
