This is an epic book. Nearly 700 pages of dense text, with clear pictures illustrating the stages of processes as well and the final products.
It lacks the humour and friendly chit-chat of a typical tv celebrity recipe books but makes up for that with the range and depth of the content. The philosophy when putting this book together seems to have been to set out all the key techniques that a cook will need, and then have a series of recipes to apply that in practice.
Examples of the topics covered include 45 pages on preparing stocks and sauce, 50 pages on cooking shellfish and 45 pages on pastry. There are tips too on how to recover the situation if things start to go wrong (and when just to give up and start again).
It is no surprise that this beautifully put together hardback has a list price of £30. At Amazon's current (Sept 2013) price of £12 it is an absolute steal.
Other books will come and go as food fashions change but I suspect that this one will be on my kitchen shelf and being used regularly for a very long time.
