Quick readings - takes perhaps 5 seconds to stabilise. Clear digits. It powers off itself after a little while or when you snap the probe tip back into the slot in the handle - one of these has gone over a year without needing a new battery. The probe is nice and sharp so you can get it into even a joint of meat without any trouble, or a tart without making too much of a mess of the crust. The probe is also a continuous stainless steel piece so it's easy to keep clean.
It comes with a calibration certificate [0 and 100 C], and a handy reference sheet with the temperatures for rare/medium/well done beef/poultry/fish etc. Of course, once you let a joint of meat rest the internal temperature will continue to rise for a while, so you still need to play it by ear a little.
I find it's useful for meat joints, getting water at 85 C to brew coffee, checking reheated dishes are up to temp without having to jam a finger into the middle, and keeping an eye on the accuracy of a sous vide setup. I noticed the commercial canteen at work uses these same ones to check trays of food are at bio-safe temperatures.
