...we've had too many issues with recipes not turning out as expected. I understand if our oven temperature is not 100% accurate, but I am a reasonable enough home cook to know when the suggested time is completely wrong. A good example is the duck (with pak choi) recipe which results in overcooked duck. Conversely, the instructions in the beef tagliata result in very rare beef (not an issue for me, but not what the recipe indicated it would be). The lemon tart recipe results in a load of excess filling, and the cooking time results in what filling you use being uncooked (even after an additional 10 minutes in the oven; our oven is not that far off). We tried one of the cookie recipes and it made far fewer cookies than it suggested it would.
Don't get me wrong, there is some lovely stuff in here, but be prepared to adapt things as you go (e.g. pull the duck off early). It's a surprise given Blumenthal's reputation for precision.
