I am totally into macaroons since my husband bought me a KitchenAid food mixer. After a getting so confused with all the different recipes out there decided to buy Jill's book. Well! what a bit of luck. Step by step instructions which if you measure accurately and follow exactly will turn out right. I am on my tenth tray and have even used the clever chart at the back of the book on page 126 for when you only want to practice with smaller quantities of 75g, 60g or 50g of egg white. These amounts have all turned out perfect. (Been using the cartons of egg white from Waitrose, so no worries about using up the yolks) I use my oven thermometer religiously and have been successfully using a silicone macaron mat to get a uniform piped macaron size. I really recommend this book. For me It's the only one I need!
