I have been waiting for this, for years !
I have seen so many appalingly written books on the subject of meat, that I wondered if ever the real deal would be published.
Well here it is ! A Bible !
I have been in the meat industry, at all levels, for over 30 years, and believe me, this is what it`s all about.
If you only ever buy one book on the subject of meat, let this be it.
The information is spot-on, real to life.
The recipes are simple yet wonderful.
The food is like it came from Mother`s Aga !
After using this book for a little time, you will cook wonderful unfussy food like a professional, or better.

The Bible analogy is a good one - this book is confusingly written, by several hands, poorly edited and in several places just plain wrong.
I actually agree on the butchery side - there's some good information there. In the kitchen, though, it could be an expensive disaster - some of the cooking advice is terrible.
