This is the only cookbook I have seriously been addicted to. I bought it on August and since then I carry it with me wherever I go so that I can read it again and again. Please mind though that if you are looking for an ordinary cookbook with lots of recipes and pictures, this is not your book.
Paul Bertolli takes his task really seriously and isn't afraid to spare a whole page just to explain how to make meat broth (Best. Ever.) or ragu, rissoto, antipasti or fresh pasta. The fresh pasta section is exceptional, I have made a serious research in the internet to find any of the 10 or so kinds of pasta you can make using this book, but there is nothing like this out there. If you decide to spare your money and buy this book, you can be sure that you will find recipes and techniques which are only known to a few people. And having tested more than 12 recipes, I can only say that the results go far beyond an ordinary home meal.
This book has also a section about curing meat and although I don't think I will ever use it, it was really interesting to read. It also has a dessert section but being a pastry chef on my own, I found nothing new in there. But as a book about food? The Best. Mr. Bertolli, thank you for sharing!
