The ultimate "how to" book,
This review is from: Manual of a Traditional Bacon Curer (Hardcover)
A long awaited publication from the wonderful Maynard Davies.
If you have read Maynards previous books you will certainly want to add this to your collection, however, it is rather an industrial book in as much as "take five sides of pork" I don't think this really matters as all his recipes and methods are written meticulously and could be scaled down for a lone sausage maker like me.
Even if you don't home cure, home smoke or make sausages it is certainly an insight into how good food should be prepared.
To quote Maynard himself "Good food for good people"
Well recommended you will not be disappointed.
