This is beautifully presented and designed cook book of a real restaurant's menu. If you are a fan of oysters, fish or meat on the bone then this is the guide for you.
The recipes aren't overly complicated as the book says sometimes the art of good food is to collect great ingredients and do as little to them as possible.
There is a lot of background info included - everything from the history of oyster eating to write ups introcuding the main UK oyster bed farmers.
The photos of main ingredients are very close shot, detailed and starkly presented. There is something a bit medical textbook about them.
The book does not anticipate any prior knowledge of oysters and shows you how to open them, again in close up detail.
A few of the recipes use unusual ingredients - quails eggs, cuttlefish, thornback ray, but there is probably a recipe for everyone here. There is even an 'on toast' section.
The meat section is again a complete guide with detailed photos so you can now visualise some less usual cuts and have to confidence to ask the butcher for them
The restaurant dressing, sauce and butter recipes are given which is a nice touch.
The desserts are more traditional and less exotic than some of the earlier recipes but look gorgeous from the photos.
A beautiful guide.
