Mr Maynards and his no nonsence book,
This review is from: Manual of a Traditional Bacon Curer (Hardcover)
Was interested in cold smoking and went out and made a stove from an old gas bottle a mates welder some bits and bobs and a couple of weekends. Cobbled this together with a wooden box for smoking things, a wire mesh tube full of sawdust to create a oak shaving joss stick and hey presto... smoke mungus.
Being me I went crazy and had dreams of saussages hanging from the washing line, so got this book for some inspiration.
Well its a fantastic piece of no nonsense traditional pig magic. Its a step by step guide to smoking and curing. Its not for the back garden and his measures are in pigs... not a leg here or there ! Still with that in mind.... I dont think you will find more types of cures or recepies anywhere at all, and would say to anybody interested that this book will delight you and inspire you. I really enjoyed it and can honestly say that no matter what I decide to do with pork this book can be tailored to suit. It covers everything. And I wish I had the room and time to practice even half of what is covered.
Good fun and recommended !
