Is it worth persevering?,
This review is from: The Hummingbird Bakery Cookbook (Hardcover)
I haven't decided whether to give up on this book completely or not just yet. I consider myself to be an experienced baker and this looked like a beautiful book and since it was from a well known bakery I didn't think twice about baking from it for a special occasion.
Big mistake! I have just looked at their website and found the "Baking Tips" section where it corrects the errors in the recipes. I was looking for an e-mail address to contact them about the issues I had but can't find one so feel I have no alternative but to post here in the event that either they read it or at least it warns others of the problems. I bought the book pre-publication so there weren't any reviews to read then. How many more of us have wasted ingredients and time?
The lemon loaf cake was huge and a bit dry despite taking it out of the oven when it was just done. It needed at least 20 mins longer then the cooking time given in the recipe during which time I had to cover it with greaseproof paper to stop it from colouring too much. On the site it now says that the quantity of flour is wrong. By about 100g I think.
The coffee ring cake made twice as much mixture as I needed. It overflowed in the oven (despite me using common sense and not filling the ring mould too full) and needed longer cooking time. I made a second 6 inch deep cake with the "spare" mix after the ring cake was cooked! The only saving grace was that once I had trimmed the excess mix and iced it with vanilla frosting (which made masses but was delicious), the cake itself tasted sensational - which was a good thing since the loaf cake was such a disappointment.
In summary, a beautiful book and I will try some of the cupcake recipes before I give up on it completely but I am astounded that a reputable business doesn't check these things. It reminds me of the River Café's Chocolate Nemesis issue in their first book. Doesn't anyone learn?

I have had problems with the recipes too. In particular the Red Velvet cake and the Pastry for pies and flans. I too made the lemon cake - what a waste. I am really disappointed.

Wouldn't buy this one based on this review. If the recipes are not correct, then why buy it
