Nice book, slightly concerned by use of saltpetre,

I am a big fan of Diana Henry and have several of her other books. This one is lovely to look at and has a nice range of preserving techniques in it. However, I primarily bought it after seeing the recipe for Salt Beef which had been printed in one of the major newspapers. On doing a lot of research into the subject, I have to say I am surprised and concerned by the amount of saltpetre in the Salt Beef recipe. The amount suggested (which is listed as optional, but not with a DANGER DO NOT USE label which might have been more appropriate) is about 30 times the safe quantity in the EU. I have been using saltpetre to make salt beef for years so questioned the amount when I came to use the recipe. I would be very worried about anyone making salt beef for the first time who didn't realise that the amount stated was actually unsafe.
