This is a beautifully-presented book, comprehensive, full of detailed information and readable even for the armchair cook: it is this generation's answer to Elisabeth David's "French Provincial Cooking", complete with fascinating anecdotes on the origins of each recipe. I have used Claudia Roden's "Mediterranean Cooking" for some years and this promises equally well.
