Before I was introduced to Pedro Ximenez sherry, I'd never noticed it on any menus. Now that I've tasted some of the best, I'm seeing it more and more. However, what has become evident is that not all Pedro Ximenez sherries are built the same. IMHO the best by far, is the antique variety. Deliciously thick, smooth and velvety, this is divine both to sip or served with/over a good quality vanilla ice cream.
