Inspired to make some Madeleines from reading about them I looked up recipes on the web and there are plenty there with lots of good advice. It seems generally agreed that using a metal tin as opposed to silicone gives a more attractive, browner crisper effect. This pan is robust, well made and easy to use. Inspired to make some Madeleines from reading about them I looked up recipes on the web and there are plenty there with lots of good advice. It seems generally agreed that using a metal tin as opposed to silicone gives a more attractive, browner crisper effect. This pan is robust, well made and easy to use. I imagine it will last for the rest of my baking life anyway. In fact I bought two as the recipe I like best gives enough for two batches. This favourite recipe uses OO Plain flour, orange yolked eggs from my free range hens, Icing Sugar, Orange zest, melted then cooled butter and some Cointreau as an extra touch. It is really a Genoese Sponge mix. Don't over fill the moulds. These dear little cakes cook in minutes and flip out of the tin with ease. Then, cool them on a wire rack and dust them with sifted icing sugar. They are always very well received. I like their simplicity and fresh taste. They can be kept and dried out a little for dunking in coffee a la Proust. Doing my research I found these tins on amazon were the best priced.

Excellent pan, so glad I got it. After lightly greasing the molds, perfectly shaped madeleines slid out with no prodding required. Recipe supplied is excellent (I used lemon rind instead of orange rind: wonderful, no need for additional extract) and a real addition to the kitchen. Note for UK bakers: powdered sugar = icing sugar.

Much research told me to get metal madeleine tins because they brown the cakes much better than anything else. So I bought these and wasn't disappointed even though they cost a lot more than the other versions around. They are amazingly sturdy, easy to clean and the cakes are popular with everyone who tries them. As they are so small they are great for kids and adults who just want a little something. They don't stay fresh for long, though, so there is nothing for it but to eat them quickly or share with friends old and new. These cakes are great dusted with a little icing sugar. I didn't make the recipe that comes with the tin but used one from the internet, which required two tins, although you can make two batches if you wish, which isn't too much bother. I use spray oil, which works a treat without dusting the tins with flour as is often recommended. You do need to grease or flour the tins well because if the cakes stick it is hard to get them out of the grooves nicely. Getting the right amount of greasing is just a case of a little experimentation and doesn't take long. Time the cooking carefully because you want the cakes to be browned just right. The photo shows the finished cakes on the cooling rack.

The product arrived extremely well packaged and on time. The quality of the product is excellent and the pans will last you a lifetime. I ordered two. They are totally unlike the type of pan you find in the hight street shops with flimsy non-stick coating and tinny, these feels like the kind of product professional chefs use. These are made to last and the coating feels and looks super strong. The pan themselves are heavier than the ones you find in high street shop and are made made of "heavy weight aluminised steel and are double coil-coated with non - stick Ilaflon Lifetime Resist coating. This unique coating has proven to be 10 times tougher" as described in the product and that is exactly what they are. I would recommend these to anyone, whether starting to build up your cooking utensils (they will last you a lifetime) or are fed up with buying poor quality items which begin to lose their non-stick quality after a few uses.

This ia a lovely sturdy pan with good quality non-stick coating,I do grease the tin with butter but this is partly to do with the taste. The recipe which comes with it works well, although I substitute lemon zest for the orange flavourings. Most madeleine recipes give enough batter for 24 cakes so you may want to buy 2 tins, however as these are best eaten fresh from the oven I tend to make 12 and put remaining batter in the fridge for the following day.

I bought this tin as my husband had a mania for making Madeleines. They came out perfectly, edges were formed as they should be and the shape was just right. Cakes came out of the tin easily and it washes well.

made excellent madeleine's i have tried the silicone trays they are useless cannot get the right colour or texture I have 2 pans and they both fit on 1 shelf length ways in the oven
