A true classic. An important book for cooks but very interesting to read beyond the culinary parts as well. Recommended for the Italian speakers.

5.0 out of 5 stars Closest Italian equivalent to Escoffier and Mrs Beeton, 23 Aug 2013

If Escoffier is the distilled essence of French cuisine and Mrs Beeton the authority on traditional English food, then Artusi is their Italian counterpart.

This pocket-sized volume, printed in miniscule Italian language text (see Science in the Kitchen and the Art of Eating Well (Lorenzo Da Ponte Italian Library) for an English language version or Science in the Kitchen and the Art of Eating Well (Lorenzo Da Ponte Italian Library) for the English language Kindle version), is packed with traditional Italian recipes and relevant advice.

The style is dated, reflecting the fact that this book was originally published in 1891.

For a more modern, but equally comprehensive book in Italian on traditional Italian cookery, try Il Cucchiaio d'Argento, Il talismano della felicità or Il grande libro della cucina italiana in oltre 5000 ricette regionali: [la più completa raccolta della nostra tradizione gastronomica] (Quest'Italia)

Questo libro si trova nella maggior parte delle cucine di tutta Italia ed è un 'must' per chi ama la cucina italiana, ma è scritto in italiano, quindi è necessario essere in grado di capire l'italiano per comprarlo!
