For most people, eclairs come filled with cream and topped with chocolate. This book shows you that this classic dessert treat can be the basis for some brilliant sweet and savoury dishes.

Yes, it is in French - but don't let that put you off.

There are some classic eclair recipes (and some great step-by-step technique guides) but it is in the more innovative combinations that the brilliance of the book comes out.

My favourite confection is an eclair that is made to look like a hot dog. A raspberry caramel sausage is created, placed into the chous pastry bun and then drizzled in fruit 'ketchup' and 'mustard' - an amazing piece of patisserie that would be the highlight of any dinner party!

The savoury recipes are equally appealing and take eclairs in a new direction.

A specialist book - but no less brilliant for being so. I love it!
