I just tried to make the nougat from this book and it went completely wrong. I put this down to part of the recipe being missing. I've since looked for other nougat recipes on-line and they all say to beat the egg whites, which the recipe in this book mentions nothing about. Another complaint about this book is that the instructions in the recipes are not put out in steps, instead they are as one big paragraph, which can make it harder to follow. All the measurements are imperial in this book. I would advise that if you are planning on making sweets then make life easier for yourself and invest in a sugar thermometer. I do like the information given about each recipe and the price.
