This book, like the rest of the DK "Bible" series, is excellent for my rather unusual purposes (I'm buying for use in Australia) but severely limited for UK users by the fact that it's an Australian edition, totally unmodified for UK publication and with no acknowledgement of the fact. It's obvious enough once you read the recipes. They use Australian terminology (eg eggplant for aubergine); the measures are primarily in Australian cups; the fudges and substitutions (inevitable in any book of ethnic cookery for everyday use) are designed around what's available in Australia. This is particularly blatant in the fish recipes: the suggested fish to use (entirely sensible in Australian terms) are mostly unheard of in the UK; worse, when they do sound familiar - like "snapper" - they are a completely different fish from the one known by the same name in the UK.

In short, avoid the whole series unless you are very familiar with Australian cooking-speak, and ready to invent your own substitutions.
