I bought this book when it was first published, and have recently bought it again through Amazon as a gift for a family member. If you want to make a curry with a fresh, authentic flavour, this book has it all. We have stopped buying Indian takeaways now as they do not compare with the recipes in this book. I now make the balti masala paste recipe at least once a month and vary the sauce ingredients to vary the curry. IF you like cooking curries, then you must try making the pastes in this book.

Pat has done it again , great recipes, easy to do once you buy your initial batch of spice and store cupboard ingredients you will not look back. You will be surprised at the tastes and authenticity you can achieve.

Inside this book is the secret to the Balti I fell in love with in 1985. Ever since then I have devoured countless curries all over the planet and nothing was ever as good as that first Balti and naan I had back then. Sadly visiting the same place years later did also disappointed.

Thankfully inside this book is a recipe for a balti paste which IS the real deal. Finally in my own kitchen I can run up a quick balti which is knockout and exactly as I remember it back then. A whole new way of life is born. No more chemical curries. Make half litre jars of the paste which last ages and cost so little. The recipee for balti naan is also worth having.
Equipment wise you will need a fridge freezer, ice cube trays for stock, an electric spice grinder, preserves jars, a wok, kaharis and this book. Just do it.
