5.0 out of 5 stars Inspiring recipies and great illustrated techniques, 23 July 2001
By A Customer
This review is from: Leith's Confident Cooking: Step-by-Step Recipes and Techniques (Leith's Step-by Step Cookery) (Hardcover)
If you want to learn to really cook, and not just follow recipes, then this is a great book for you. The book combines classic British and world recipes with illustrated steps on how to make them and a special section on techniques. Inspiring recipes are arranged - not unusually - by courses, including sections on vegetarian dishes and baking. Lots of variety; to identify any particular dishes would not do justice; but there's something for all cultures and tastes. All the recipes are fully illustrated in colour - not just the finished dish, but also several steps along the way. This gives you the confidence to try dishes you might normally steer clear of. The photos are full-colour, good quality and mouth-watering. What makes this book really stand out is the section on techniques. From filleting fish and boning chicken to selecting joints of meat and different ways to cook rice, there is solid, easy-to follow advice. All aspects of cooking are covered - even down to finishing touches such as how to make an ice bowl and fan an avocado. For those who are put off trying new ideas by previous culinary disasters, there's also a useful section on how to avoid those lumpy sauces and mousses that won't set. In this book, Prue Leith hopes to reassure beginners and inspire confident cooks; she is well qualified to do both; she founded the Leith School of Good Food and Wine, has presented her own TV series and has an OBE for services to good food. This is the one book my friends want to keep when they borrow it ...

5.0 out of 5 stars Excellent enhanced recipe book, 13 Dec. 2012
This review is from: Leith's Confident Cooking: Step-by-Step Recipes and Techniques (Leith's Step-by Step Cookery) (Hardcover)
I picked up a second-hand copy of this book at a silly price, and as there are only 2 reviews so far, thought I would add some information to help others. Over the last week or so I have been hunting down several Leiths books, and have got this one, the School, and the Bible for knock down prices. I see there are several of these on Amazon for prices starting at 1p, with postage about £2.50 - that's a bargain, the postage on the one I received actually cost £5.30!

So, what is this book? Unlike Leiths Bible and School books, this is a true recipe book (the others are more about how to cook in general), but the first enhancement is that each recipe is shown step by step (hence the title I suppose :-) ) with clear photographs of each step. There are not loads of steps, 4 or 5 seems to be the norm, but that's enough to help you along. There are eight recipe sections, Soups & Starters, Fish & Shellfish, Poultry & Game Birds, Meat, Vegetarian, Salads & Side Dishes, Desserts and Baking. The baking section has biscuits and cakes (and a Chocolate Pizza!), but no bread. However, the ninth section of the book is an excellent Techniques section, which amongst other things (Herbs, spices, fish, shellfish etc.), has a nice little section on bread, including variations to the normal basic white. The Techniques section in my opinion is the second enhancement which lifts this book above the normal recipe book, and brings it towards an instruction manual.

I would thoroughly recommend this book to anyone, especially someone just starting out in the kitchen - if you do not know much yet about cooking, this book will help you, and considering you can get a copy for less than £3 delivered, it's a no-brainer. It's not the only cookery book you will ever need, but it doesn't claim to be - it is however, an excellent first book, or an addition to your cookery library.

5.0 out of 5 stars Learn to cook ..., 18 Mar. 2006

As the previous reviewer says, this is an excellent way to learn how to cook, and not just read recipes.
The Step by Step approach really works in this book, and you will learn techniques that you can apply to similar dishes.
More a workbook, than a recipe book.
It's unlikely that you'll get this book new, but if you see it in a discount or second hand bookshop, then snap it up.
