Although this book is brimming with information of the minutest detail, it seems Lawrence was unclear who his readers would be. I specifically bought this book because I wanted to make vinegar but there is no clear step by step method for making vinegar. Lawrence tells us which juices we should look for, tells us that campden tablets are used to sterilize them then tells us that explaining how to remove the sulphites from the campden tablets is not within the scope of this book, but then goes on to include page after page of pictures and descriptions of fruit flies and bacteria. Reading this book is like eavesdropping on a conversation between experts who don't want to give their secrets away.
