I tried a few recipes from a book borrowed from a friend. I was so impresssed I had to have my own copy. It took a while as its' been out of print for a while, but it was definately worth the wait. The food is from all over the caribbean, and unlike other books that make claims to give you authentic recipes, this one does just that. Jamaican, Trinidadian, Bajan - all just as tasty as if cooked by locals. I've many caribbean cookery books, but not one of them comes close to this one.

The best ever Caribbean cookbook, full of authentic recipes andtraditional classics from around the Caribbean. The book is written forcooks in the Caribbean so some recipes call for ingredients unavailable inmost other places - such as dasheen leaves, and cascadoo fish. However,most are useable, easy to follow, and definitely provide an authentictaste. The only weak section is 'tea and coffee occasions' which containsrather uninspired recipes. To make up for this the book contains a sectionon traditional recipes which would be treasured even by cooks in theCaribean.

This book is good with basic ingredients. One disappointment is the lack of fresh herbs and spices in recipes. The Caribbean is vibrant and alive with all those colors and most of the dishes missed that out. The secrete to an excellent dish is in the herbs and spices. Overall good skeleton to work with.
