Having graduated in one of the top culinary schools in USA, I'd say is my 4 years of studies compiled into a book! From sugar and chocolate pieces to plated desserts, biscuits, breads, sauces... It's even just an incredible read! It's like being back at collage again. Each chapter has an introduction that will set you up for anything you want to do. Conversions, substitutions, temperatures, tempering methods, step by step guidance like if you were being taught by your own personal chef... I'm am in love!
