Fantastic and clear recipes with mostly easy to find ingredients! I am from San Francisco where ingredients like dark miso paste and tofu varieties are readily available, but it will take some digging in the UK. The recipes are very clear and absolutely delicious. Many of the recipes are based off of similar ingredients so you won't have to buy too much unusual stuff. I have made Japanese before, but the instructions in this book make things so much easier to follow.

Excellent book. Should have been called SUSHI MADE EASY.
Simple to follow instructions and as good as or better than going to the Yo Sushi counter.

I love the fact that I could get the cookbook. I went to Yo sushi in Birmingham, only been there once before but love the food. Saw the cookbook on top of a fridge in a stack of about 10. Asked if I could have a look. Saw the price on the back, which was £15.99. Asked to purchase it when we asked for the bill. I was told I couldn't because they were just for merchandising.
Came home and got it form amazon for a third of the price.

This book is filled with excellent recipes graded by difficulty which makes it perfect for beginners. The title is a bit misleading as not all the recipes are for sushi. There are lots of good noodle dishes, salads, vegetable dishes and even deserts. Perhaps best of all, the first part of the book explains all the techniques involved such as cooking noodles, making tempura as well as how to mould different types of sushi. There is also a detailed section on how to make all the sauces and dressings which are an essential part of Japanese cooking.

I have found it inspirational and very easy to follow and recommend it for anyone new to this type of cookery.

If you like your cookbooks, this is a good buy, Interesting reading, and recipes to seriously impress with at dinner parties, Easier than I thought it would be to make the maki and Sushi rolls, Ingredients are easily bought online, I used the Japan Centre online, But didnt really check to see if these are competative prices or not, But have noticed that Sainsbury's stock a lot of them as well. There also some everyday recipes, Such as kebabs and curries that are quite tasty and (im assuming by the ingredients) a lot healthier than most other asian recipes I have (This based on fat content and not salt & sugar, mainly from the rice wine and soy sauce). Enjoy

a really great book if you are looking to learn about Japanese cooking.

it covers everything you need to learn how to make not just sushi but some incredibly tasty Japanese dishes, I even managed to convert my wife's way of thinking when it comes to sushi! (its not just raw fish!)

Some idiot complaining about the authenticity persuaded me, out of cussedness to buy this book, boy, am I glad I did! Simple, (with occasionaly complex) dishes, very clear instructions, a section giving full instructions on producing all the great Japanese sauces, full and clearly illustrated explanations of all the sushi techniques, great illustrations... if you have any respect for your taste buds, go out and buy this now.
