I have a set of Sabatier knives that I find really hard to keep sharp - and there's nothing worse than a blunt knife. I have a steel which I can't use, and also an Oztech sharpener which is pretty useless unless the knives have been professionally sharpened beforehand - something that's nigh on impossible in the current climate! Can anyone recommend a knife sharpener that actually sharpens to a good blade, please?
I have a Chantry Modern knife sharpener which keeps my knives in tip top condition. It copes with both plain and serrated blades. It is a very compact, neat design which just sits on the work surface adjacent to my chopping board so that it always handy.
